This beer is the true definition of a collaboration. Līgo was brewed using a wild yeast isolated from a small flower outside the Pen Druid brewery in Sperryville Virginia. It was delivered to us in the finest Perrier bottle a month before the brew, giving us just enough time to grow enough for a 4000L brew. For the base beer, we used whole malted oats from Copper Fox Distillery (also Sperryville Virginia), as well as Canadian 2 row barley, and Canadian un-malted wheat. We brewed all day, laughed, high-fived, and had a lovely dinner that night. Oh, the memories.
What it smells like, what it tastes like: This wild Virginia yeast delivers lots of spice notes on top of a base beer that is bone dry. Notes of clove.
