Ten years ago, almost to the day, we released our first collaboration with Luc "Bim" Lafontaine. Since then, Bim went on to open Godspeed Brewery, a much-loved establishment in the East End of Toronto, specialising in refreshing lagers, bright hoppy ales, and refined saisons, often featuring expressive Japanese ingredients.
Though much has changed since Bim first shared his expertise with a fledgling brewery (that’s us!), many things in this second collaboration have remained the same:
The name: Last Splash — at the time, we didn’t know the first Last Splash wouldn’t be the last Last Splash.
The style: Double IPA (though we called it an Imperial IPA, as per 2012’s vernacular)
The hops: Wakatu and Simcoe
The water: Toronto’s finest
Our friendship with Bim has stood the test of time, but a Last Splash is something best enjoyed fresh. This latest Last Splash is awash with notes of sweet fern, orange bitters and toasted biscuit. Supremely tasty with pleasant bitterness throughout within a crystal clear package.
